    Amaranth Peanut Butter Bar Ingredients:

    12 medjool dates, pitted
    1/4 cup + 2 tbsp Cookie Dough Peanut Butter
    1 cup popped amaranth
    1 tbsp coconut oil, melted
    1 tbsp chia seeds
    1 tbsp mini chocolate chips

    1. In a food processor, blend together the dates, peanut butter and coconut oil until well blended and a dough ball forms. Add in the chia seeds and pulse just until combined.
    2. Place the dough ball in a large bowl and add the popped amaranth. Fold the dough together incorporating the amaranth with your hands.
    3. Press the dough into a 6x6 inch pan lined with parchment paper. Top with mini chocolate chips and chill for 1 hour before cutting into 12 bars and serving.
