    Birthday Cake Ice Cream Sandwich Ingredients:

    2/3 cup gluten free oat flour
    1 cup coconut sugar
    1 cup Birthday Cake Peanut Butter
    1/4 cup coconut oil, melted
    1/4 cup water
    1 egg, lightly beaten
    1 tsp vanilla extract
    1 tsp baking soda
    Pinch sea salt

    Other:
    2 cups light ice cream
    2 tbsp sprinkles

    Instructions
    1. In a mixing bowl, beat together the peanut butter and coconut sugar using a handheld mixer.
    2. Add in the egg, oil, vanilla and water and mix until combined. Add in the remaining dry ingredients and continue mixing until a dough forms. Cover and chill in the freezer for 20 minutes.
    3. Preheat oven to 375F and prepare a baking sheet with parchment paper. Use a cookie scooper to make 16 evenly sized balls. Drop the balls onto the baking sheet about 1" apart.
    4. Bake for 9-11 minutes. Remove and let cool on baking sheet for 3 minutes before transferring cookies to a wire rack to continue cooling.
    5. Once cooled, scoop one large scoop of light ice cream into the center of half of the cookie and top with another cookie to create a sandwich. Finish with sprinkles and serve immediately or freeze until ready to serve.
