    Breakfast Hash with Bacon Dip Ingredients:

    1 medium sweet potato
    1/2 small onion, diced
    1 tbsp olive oil
    Salt to taste
    Pepper to taste
    3 cups spinach
    3 eggs
    Bacon Habanero Dip’n Spread

    Instructions
    1. Preheat oven to 400F and prepare a cast iron skillet with non-stick spray. If a cast iron skillet is unavailable, a sheet pan can be used.
    2. Wash and chop the sweet potato into 1" cubes.
    3. Place the sweet potatoes and diced onion into a bowl and toss with olive oil, salt and pepper. Transfer to the skillet and bake for 25 minutes or until tender, stir after 15 minutes.
    4. Meanwhile, cook the spinach in a non-stick pan until wilted and set aside.
    5. Remove the skillet from the oven, add the spinach and create three wells in the mixture and crack an egg into each.
    6. Return the cast iron skillet to the oven and bake for another 5-6 minutes or until eggs are cooked.
    7. Serve immediately with Bacon Habanero Dip'n Spread.
