    Chipotle Lime Chicken Skewer Ingredients:

    1 lbs boneless, chicken breast
    1/4 cup Chipotle Lime Peanut Butter
    2 tbsp olive oil
    2 tbsp soy sauce, gluten free
    1-2 tbsp sriracha
    2 tbsp lime juice
    1/8 tsp salt
    Parsley for garnishing

    Instructions
    1. Preheat oven to 400F and prepare a baking sheet with tin foil.
    2. Wash and pat dry chicken. Cut chicken into long thin strips, about 1 inch in width and then place them on the baking sheet.
    3. In a bowl, stir together the peanut butter, olive oil, soy sauce, sriracha, lime juice and salt until smooth. Spoon mixture over chicken.
    4. Bake for 16-20 minutes or until chicken is thoroughly cooked. Insert skewers, garnish and serve.
