    Chocolate Chip Whoopie Pie Ingredients:

    1/3 cup gluten free flour
    1/2 cup coconut sugar
    1/2 cup Cookie Dough Peanut Butter
    3 tbsp egg, whisked
    2 tbsp coconut oil, melted
    1 tsp vanilla extract
    1/2 tsp baking powder
    Pinch salt

    Filling:
    1/3 cup heavy cream
    2 oz. low fat cream cheese, room temperature
    2 tbsp powdered sugar
    2 tbsp mini chocolate chips

    Instructions
    1. In a mixing bowl, stir together the flour, coconut sugar, baking powder and salt.
    2. Add in the peanut butter, whisked egg, vanilla and oil and mix using a handheld mixer until a dough forms.
    3. Chill dough for 20 minutes in the freezer.
    4. Preheat oven to 375F and prepare a baking sheet with parchment paper. Separate dough into 1/2" balls (about 16). Drop them on the baking sheet and press them down slightly. Bake for 7-9 minutes. Be careful to not overbake.
    5. Once the cookies are cool, whisk together the heavy cream using a handheld mixer until light and fluffy.
    6. Add in the cream cheese and powdered sugar and continue mixing until combined. Drop 2-3 tablespoons in the center of half of the cookies.
    7. Sprinkle with mini chocolate chips and top with remaining cookies to create a whoopie pie.
