    Dark Chocolate Toasted Coconut Lime Donut Ingredients:

    1 cup gluten-free flour
    1/2 cup unsweetened applesauce
    1/4 cup almond milk
    1/4 cup Dark Chocolate Peanut Butter
    1/4 cup unsweetened cocoa powder
    1 egg, large
    1/3 cup granulated sweetener (Truvia)
    1/4 cup unsweetened coconut shreds
    1 tsp baking powder
    1 tsp baking soda
    Pinch sea salt

    Glaze:
    3/4 cup confectioners sweetener (Swerve)
    1tbsp lime juice
    1-2 tbsp water
    zest of half a lime

    Topping:
    1/4 cup unsweetened coconut shreds
    Zest of half a lime

    Instructions
    1. Preheat oven to 350F and prepare a donut pan with non-stick spray.
    2. In a mixing bowl, use a hand held mixer to beat together the milk, applesauce, peanut butter and egg until well combined.
    3. Add in the flour, cocoa powder, granulated sweetener, coconut shreds, baking powder, baking soda and salt. Mix until combined.
    4. Fill the donut molds with the batter and bake for 12-14 minutes. Let cool. Meanwhile, place the coconut shreds (topping) onto a baking sheet and bake for 2-3 minutes or until golden brown.
    5. For the glaze: Stir together the glaze ingredients until smooth. Dip each donut in the glaze. Top with toasted coconut and lime zest.
