    Dark Chocolate Waffle Lollipop Ingredients:

    1 banana, ripe
    1 egg, large
    1 cup gluten-free oat flour
    2 tbsp unsweetened cocoa powder
    1/4 cup Dark Chocolate Peanut Butter
    2 tbsp granulated sweetener (Truvia)
    1/4 cup + 3 tbsp almond milk
    1/2 tps baking powder
    1/4 cup + 2 tbsp dark chocolate chips
    1/2 tbsp coconut oil
    Sprinkles

    Other:
    6 popsicle sticks

    Instructions
    1. Heat a mini (3'') waffle maker with non-stick spray. In a large mixing bowl, stir together the oat flour, cocoa powder, granulated sweetener and baking powder and set aside.
    2. In another bowl, mash the banana and whisk it together with the egg and almond milk until smooth. Add in the peanut butter and continue mixing until incorporated.
    3. Add the wet ingredients to the dry and mix until combined. Fill the waffle iron with batter and cook per manufacturer's instructions.
    4. After you have made all the waffles, insert a popsicle stick half way into the bottom of the waffle and place them on a baking sheet lined with parchment paper.
    5. In a microwave safe bowl, melt together the chocolate and coconut oil until smooth. Dip each lollipopped waffle halfway into the chocolate. Top with sprinkles and return to the baking sheet.
    6. Serve immediately or chill to harden chocolate.
