    Gingerbread Cheesecake Bite Ingredients:

    6 oz. cream cheese, room temperature
    1/4 cup powdered sugar
    3 tbsp Gingerbread Peanut Butter
    1 cup cool whip
    3 gluten free gingersnap cookies

    Instructions
    1. Place the cream cheese, powdered sugar and peanut butter into a mixing bowl.
    2. Use a handheld mixer to beat together until smooth.
    3. Use a spatula to scrape down the sides and transfer to a loaf pan lined with parchment paper.
    4. Freeze for 2 hours.
    5. Place the cookies into a food processor and blend until fine crumbles form. Place the crumbles into a shallow bowl.
    6. Remove the cheesecake mixture from the freezer and use a cookie scooper to make evenly sized balls. Roll the balls in the mixture and serve.
    7. *If cheesecake is too hard to scoop, let sit at room temperature for 5-10 minutes.
    8. **Store prepared bites in the refrigerator.
