    Mint Chocolate Chip Cookie Skillet Ingredients:

    3/4 cup gluten free flour
    1/4 cup granulated erythritol
    1/4 cup unsweetened applesauce
    1/4 cup olive oil or coconut oil, melted
    2 tbsp water
    1/4 cup mini chocolate chips
    1/2 tsp baking soda
    1/2 tsp baking powder
    1 tsp vanilla extract
    1/4 tsp salt
    3 tbsp Mint Chocolate Chip Peanut Butter

    Instructions
    1. Preheat oven to 350F and prepare a 6" cast iron skillet with non-stick spray.
    2. In a mixing bowl, stir together the flour, granulated erythritol, baking soda, baking powder and salt until combined.
    3. Add in the oil, applesauce, water and chocolate chips and stir until a dough forms.
    4. Separate the dough into two evenly sized pieces. Place half of the dough into the bottom of the prepared skillet. Top with 3 tablespoons peanut butter.
    5. Shape the remaining dough into a disk and press it over the peanut butter.
    6. Bake for 10-12 minutes. Let cool before serving.
