Peanut Butter Sweet Potato Quesadillas
A no-cheese quesadilla. A peanutdilla!
Peanut Butter Sweet Potato Quesadilla Ingredients:
1 large sweet potato, peeled & chopped
1/4 cup Nuts ‘N More Peanut Butter
3 gluten-free tortillas
1 tbsp olive oil
Plain Greek yogurt (garnish)
Peanut Butter Sweet Potato Quesadilla
Place the chopped and peeled sweet potato pieces onto a microwave safe plate and cook for 3-4 minutes or until soft.
Transfer the sweet potatoes to a food processor or blender along with the peanut butter. Blend until smooth. Stop and scrape the sides as needed.
Heat a large frying pan with olive oil. Place a tortilla into the frying pan and add 1/3 of the sweet potato mixture to half of the tortilla. Fold tortilla in half and cook until golden brown on both sides.
Repeat until you have used all the filling. Cut the quesadillas into 6 triangles.
Serve with sides of avocado, Greek yogurt or garnishes (cilantro, parsley)
