    Pumpkin Cheesecake Bites

    Pumpkin Cheesecake Bite Ingredients:

    1/2 cup Spiced Pumpkin Pie Peanut Butter
    8oz reduced fat cream cheese, room temperature
    1 cup powdered sugar
    1 tsp pumpkin pie spice
    1 cup white chocolate
    1 tsp coconut oil
    2 tbsp dark chocolate

    Instructions
    1. Place the cream cheese, peanut butter and pumpkin spice into a mixing bowl and beat with a handheld mixer until well combined.
    2. Add in the powdered sugar and continue mixing until fluffy. Cover and chill in the freezer for 20 minutes.
    3. Meanwhile, prepare a baking sheet with parchment paper.
    4. Remove from freezer and use a 1" cookie scoop to make 15 evenly sized balls. Chill balls in the freezer for 20 minutes.
    5. Melt the white chocolate and coconut oil together until smooth. Cover each ball in white chocolate.
    6. Melt dark chocolate and drizzle dark chocolate over the white. Chill until ready to serve.
