Pumpkin Spice Pancakes Ingredients:
1 cup gluten free baking flour
1 tsp baking powder
⅛ tsp salt
1 packet stevia
¾ cup pumpkin puree
2 tbsp NNM Pumpkin Spice Peanut Butter
2 eggs, large
1 ½ cup almond milk
1 tsp vanilla
Pumpkin Spice Pancakes
Place the pumpkin, peanut butter, eggs, almond milk and vanilla into a bowl and whisk until smooth.
Add in the flour, baking powder, salt and stevia and mix until combined.
Prepare a pancake griddle or pan with non-stick spray and turn on medium-low heat.
Cook pancakes ¼ cup at a time for 2-3 minutes on each side.
