    Roasted Peanut Butter Cauliflower Salad Ingredients:

    1/4 cup Peanut Butter, warmed
    3 tbsp water
    1 tbsp gluten free soy sauce
    2 tsp olive oil
    1 tbsp lime juice
    1 tsp vinegar
    1 tsp hot sauce
    Salt to taste
    Pepper to taste
    1 medium cauliflower, chopped
    1/2 cup cherry tomatoes, sliced
    1/4 cup shredded carrots
    4 cups lettuce

    Instructions
    1. Preheat oven to 400F and prepare a baking sheet with parchment paper.
    2. In a mixing bowl, whisk together the peanut butter, water, soy sauce, oil, lime juice, vinegar, hot sauce and salt and pepper until smooth.
    3. Dip each piece of cauliflower into the mixture and place them on the prepared baking sheet. Bake for 15-20 minutes.
    4. Assemble salad with lettuce, carrots, tomatoes and cauliflower. Serve.
