  1. Preheat oven to 325F and prepare a baking sheet with parchment paper or a silicone mat and set aside.
  2. In a microwave safe bowl, gently melt the coconut oil and peanut butter together until smooth. Add in the maple syrup and chopped apple.
  3. In a large bowl, stir together the oats, pecans, cinnamon, stevia and salt.
  4. Pour the peanut butter mixture over the oats and mix until oats are completely moistened.
  5. Spread the oats evenly onto the prepared baking sheet. Bake for 50 minutes to an hour, stirring every 10 minutes to keep from burning.
  6. Remove from oven and let cool for 1 hour before serving.
