    Spiced Pumpkin Loaf Ingredients:

    ½ cup mashed banana (about 1 large banana)
    ½ cup pumpkin puree
    3 eggs, large
    ⅓ cup NNM Spiced Pumpkin Pie Peanut Butter
    ⅔ cup almond milk
    2 tsp vanilla extract
    ½ cup coconut sugar
    ½ cup Truvia or all coconut sugar
    2 cups gluten free baking flour
    1 tsp cinnamon
    1 tsp pumpkin pie spice
    1 tsp baking powder
    1 tsp baking soda
    ¼ tsp salt
    ¼ cup Lily’s sugar free chocolate chips

    Instructions
    1. Preheat the oven to 350 F and prepare a 9x5 inch loaf pan with parchment paper and non-stick spray.
    2. In a bowl, whisk together the mashed banana, pumpkin, eggs, peanut butter (you can heat it up in the microwave if it’s too tough to whisk in), almond milk, vanilla, coconut sugar and Truvia (or all coconut sugar if that’s what you are using).
    3. In another bowl, stir together the flour, spices, baking powder, baking soda and salt and then dump the dry ingredients into the wet and stir until no dry spots remain.
    4. Transfer the batter to the prepared pan and top with chocolate chips.
    5. Bake for 40 minutes, remove and cover with foil and then continue baking for additional 20-30 minutes. Let cool before serving.
