    Strawberry Poke Birthday Cake Peanut Butter Cake Ingredients:

    1 c brown rice flour

    2 egg whites

    2 tbsp granulated stevia

    2 tbsp almond milk

    2 tbsp Birthday Cake Peanut Butter

    2 tbsp greek yogurt

    ½ tsp baking soda

    ½ tsp baking powder

    3-5 drops red food coloring

    ½ c strawberries, chopped

    ½ c coconut cream + more for topping

    2 tbsp maple syrup

    Strawberry Poke Birthday Cake Peanut Butter Cake
    Instructions
    1. Preheat oven to 325F and prepare an 8x8 inch pan with parchment paper.
    2. In a bowl, whisk together the egg whites, almond milk, greek yogurt and peanut butter until smooth.
    3. In a separate bowl, stir together the brown rice flour, stevia, baking soda and baking powder.
    4. Add the dry ingredients to the wet and whisk until smooth. Stir in food coloring.
    5. Pour batter into the prepared pan and bake for 8-10 minutes. Let cool
    6. While cake is cooling, place the strawberries, maple syrup and coconut cream into a food processor and blend until smooth, set aside.
    7. Once cake is cooled, use the end of a wooden spoon to poke hole into the cake. You can to poke them deep but not all the way through.
    8. Pour strawberry sauce over the cake, filling all the holes. Top with whipped coconut cream and serve.
