    Sweet Potato Casserole Ingredients:

    2 medium sweet potatoes
    2 tbsp water
    2 tbsp coconut sugar
    1 tbsp butter, melted
    1 tbsp milk
    1 tsp cinnamon
    1/4 cup chopped pecans
    1 1/4 cup gluten free mini marshmallows
    1/2 cup salted caramel peanut butter

    Instructions
    1. Preheat oven to 350F and prepare a 5" baking dish with non-stick spray.
    2. Wash, peel and chop the sweet potatoes into 1" cubes and place them in a microwave safe bowl with water.
    3. Microwave on high for 3-4 minutes or until sweet potatoes are soft.
    4. Place the potatoes, coconut sugar, butter, milk and cinnamon into a food processor and blend until smooth then transfer to the prepared dish.
    5. Top with chopped pecans and mini marshmallows.
    6. Bake for 15-20 minutes or until marshmallows are toasted.
    7. Serve immediately drizzled with Salted Caramel Peanut Butter.
