    Vegan Chocolate Dipped Cookies Ingredients:

    1 c Nuts ‘N More Vegan Peanut Butter
    ¾ c Truvia or granulated sweetener
    1 eggs large
    1 tsp vanilla extract
    ½ tsp baking soda
    ⅛ tsp salt
    ½ c vegan dark chocolate
    Flaked sea salt for topping

    Instructions
    1. Preheat oven to 350 F and prepare a baking sheet with parchment paper.
    2. In a bowl, beat together the peanut butter and Truvia until smooth using a handheld mixer.
    3. Add in the vanilla, baking soda, salt and egg and continue mixing until a dough forms.
    4. Use a cookie scooper to make 12 evenly sized balls and place them on the baking sheet about 2 inches apart. Press them down slightly using a fork.
    5. Bake for 11-12 minutes. Do not over bake.
    6. Let cool for 15 minutes on the baking sheet before transferring to a cooling rack to continue cooling.
    7. Once completely cooled, melt the chocolate in a microwave safe bowl in 15 second increments until smooth.
    8. Dip each cookie in the chocolate and then place it on a piece of parchment paper to cool at room temperature until chocolate has hardened.
    9. Sprinkle with sea salt and serve.
