Vegan Peanut Butter Cookies
Nuts ‘N More Vegan Peanut Butter
Truvia or granulated sweetener
vegan dark chocolate
Flaked sea salt for topping
Preheat oven to 350 F and prepare a baking sheet with parchment paper.
In a bowl, beat together the peanut butter and Truvia until smooth using a handheld mixer.
Add in the vanilla, baking soda, salt and egg and continue mixing until a dough forms.
Use a cookie scooper to make 12 evenly sized balls and place them on the baking sheet about 2
inches apart. Press them down slightly using a fork.
Bake for 11-12 minutes. Do not over bake.
Let cool for 15 minutes on the baking sheet before transferring to a cooling rack to continue
Once completely cooled, melt the chocolate in a microwave safe bowl in 15 second increments
Dip each cookie in the chocolate and then place it on a piece of parchment paper
to cool at room temperature until chocolate has hardened.
Sprinkle with sea salt and serve.
