    ¼ c Birthday Cake Peanut Butter 
    2 tbsp coconut oil
    4 eggs
    2 tbsp vanilla extract
    ½ c almond milk
    ¼ c granulated sweetener
    2 packets stevia
    ½ c brown rice flour
    ¼ c almond flour
    1 tsp baking soda
    1 tsp baking powder
    2 cup gluten-free light whipped cream
    2 tbsp sprinkles

    Birthday Cake Peanut Butter Cupcakes
    Instructions
    1. Preheat oven to 350F and prepare a cupcake pan with liners.
    2. In a microwave safe bowl, gently melt the peanut butter and coconut oil together until smooth and set aside.
    3. In a large bowl, whisk together the eggs, almond milk and vanilla extract then stir in the melted peanut butter/coconut oil mix.
    4. Add the brown rice flour, almond flour, sweetener, baking soda and powder then mix until smooth.
    5. Distribute batter between 11 cupcake liners and bake for 14-16 minutes. Top with whipped cream and sprinkles.
