    1 cup gluten free baking flour
    1 tsp baking powder
    ⅛ tsp salt
    1 packet stevia
    ¾ cup pumpkin puree
    2 tbsp NNM Pumpkin Spice Peanut Butter
    2 eggs, large
    1 ½ cup almond milk
    1 tsp vanilla

    1. Place the pumpkin, peanut butter, eggs, almond milk and vanilla into a bowl and whisk until smooth.
    2. Add in the flour, baking powder, salt and stevia and mix until combined.
    3. Prepare a pancake griddle or pan with non-stick spray and turn on medium-low heat.
    4. Cook pancakes ¼ cup at a time for 2-3 minutes on each side.
