    Spicy Peanut Butter Tofu Ingredients:

    1 block tofu, extra firm
    1 tbsp tapioca flour
    1 tsp olive oil
    1/4 cup NNM Plant Based Peanut Butter
    3 tbsp olive oil
    1 tbsp soy sauce, gluten free if necessary
    1 tsp chili flakes
    1 tbsp lime juice
    1 tbsp siracha
    1 tsp garlic powder
    1/8 tsp salt
    Green onion, chopped for garnish

    Spicy Peanut Butter Tofu

    1. Wrap the tofu in a tea towel or paper towel and place it on a plate, top with another plate then place something heavy on top of that to press down on the tofu.
    2. Let sit for 30 minutes to drain all the water.
    3. Preheat oven to 400F and prepare a sheet pan with parchment paper.
    4. Cut the tofu into small cubes.
    5. Toss in the tapioca flour and olive oil until well coated.
    6. Transfer to the baking sheet and bake for 30 minutes, flipping every 10 minutes or so. Cook until golden brown.
    7. Place all sauce ingredients into a frying pan and cook over medium heat, stirring when needed.
    8. Cook for 4-5 minutes. Remove the tofu from the oven and toss it in the sauce.
    9. Serve immediately. Serve with rice and green onion if desired.
